Rain, cold and corn muffins

Oh well, I guess this rain is only here in Charlotte to remind us a little bit of Portland. As a rain consequence, we are staying home this weekend, enjoying some B movies and our new black office.

As promised, here comes the fabulous corn muffins recipe, taken from the light and fit Dannon recipes:

Ingredients:
1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
2 large eggs
1-1/4 cups Strawberry, Vanilla (or whatever tastes good for you) yogurt
1/4 cup canola oil

Directions:

Preheat the oven to 375 F
In a bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together eggs, yogurt and oil. Then, add the yogurt mixture to the lour mixture and stir the batter until it is combined.
This should be enough batter for 12 muffins tins.
Bake the muffins in the middle of the oven for 20 minutes
